Ingredients:
1 pound Chicken Breasts cut into 1 inch pieces
Our Dad’s Chicago Marinade
2 White onions cut into 1 inch pieces
2 Green Peppers cut into 1 inch pieces
2 Tomatoes cut into 1 inch pieces
Any other vegetable you would like to add to the kebab cut into 1 inch pieces
Directions:
- Cut us as many chicken breasts as needed into 2” chunks.
- Place in a large bowl and cover all of the chicken with enough marinade to coat each piece. Marinate chicken breasts for at least 2 hours. (Marinating overnight or longer is recommended for tastier results.)
- Cut up 2 onions, 2 green peppers and 2 tomatoes into large pieces. (you can use vegetables for this – mushrooms and any peppers would be good).
- Get out your skewers and skewer the chicken, alternating the chicken with the different vegetables.
- Grill the kebabs until cooked through and serve with rice or any side dish of choice.
